DESCRIPTION

Potato production in Ecuador is concentrated in the Ecuadorian Sierra. The provinces of Carchi, Pichincha, Cotopaxi, Tungurahua and Chimborazo are the main producers, which contribute 79%.
The varieties INIAP - Puca Shungo (red pulp), INIAP - Yana Shungo (purple pulp) and the Egg Yolk variety also known as yellow chaucha (yellow pulp) are appreciated in the markets of Europe, Asia and America, for the high value Nutritious, culinary quality and striking colors.
